Ruinart Winery As a classified site, the famous Ruinart Cellars are a fascinating sight. An impressive staircase plunges more than 30 meters underground, finishing in a network of galleries that lead to our chalk pits, where our champagnes are aged. The cellars that hold the Ruinart treasures are like immense subterranean cathedrals lit by a dim light. The silence that envelopes the walls invites a quiet contemplation. The temperature in the cellars remains constant at 11 degrees Celsius for all the years during which our champagnes acquire their nobility.
